Instead of Green Beer, how about a healthy Shamrock Shake Smoothie to celebrate St. Paddy’s Day? This smoothie is packed with Vitamin A, C, Calcium, Iron and Potassium AND it’s super yummy and refreshing. With all the recent research supporting the benefits of full fat dairy, you could even sub the low fat vanilla yogurt and milk with plain greek yogurt and regular organic whole milk or non-dairy milk if you are lactose intolerant.
Are You At The Top Of Your Nutrition Game?

We’ve all heard the saying “you are what you eat,” but how do we know if it’s true? We’ve certainly seen people who seem to be able to get away with eating whatever they want and still look healthy and slim; yet others struggle with their weight and body composition no matter how hard they try. Can we assume that just because someone looks healthy and fit, their body must be operating like a well-oiled machine?
I recently came across a technology that utilizes nobel prize winning discovery called the Raman-Effect to measure the levels of carotenoids (one of the key antioxidants) in our bodies. Antioxidants are known for their role in reducing disease risks, especially cancer. If we can easily measure the level of antioxidants in our bodies, it could be a great preventative health indicator and can potentially motivate us to be more mindful about our food choices. It can be an objective accountability tool to help us feel more in control of our own health.
The device that measures our carotenoids level is called a Biophotonic Scanner. It is a non-invasive device that can accurately measure our average carotenoid levels over the past 60 days in a matter of 30 seconds. The scanner produces a beam of light that only contain blue photons. Blue light has a wavelength of 473 nanometers. When these blue photons come across a carotenoid molecule, it’s wavelength increases to 510 nanometers - the wavelength of green light. Only carotenoid molecules can trigger this change, known as the Raman shift. The amount of green photons created is then used to determine the concentration of carotenoids in our body.
Majority of our dietary carotenoids come in the form of beta-carotene, lutein and lycopene. Examples of foods rich in carotenoids include carrots, sweet potatoes, dark leafy greens, tomatoes and avocados. Combining these foods with healthy fats may enhance absorption. Certainly, dietary supplements could help if we are not willing or able to maintain a antioxidant rich diet on a consistent basis.
I was fortunate enough to get a sneak peak of this technology and got scanned a few days ago. I scored in the green zone (see diagram above), which was a respectable score but still shows room for improvement. I am motivated to boost my vegetable intake even more!
